KFC revealed how it makes its signature sauce – and the reveal has shocked people.
The fried chicken experts reported on chain life during the Christmas season in a British documentary.
While the Channel 4 document aired in December, a clip was recently shared on TikTok showing a staff member in a UK restaurant making the famous sauce.
In the clip, the worker named Ann explained she was making 700 liters of the brown sauce a week before breaking off the process for viewers.
But it’s the little-known detail of the use of KFC’s « crackling » – the leftovers from the bottom of chicken fryers – that caused the clip to go viral.
Ann says she takes the « nice crackle » and wipes it in the water before putting it in the microwave.
Traditional sauce recipes use drips from frying pans, a point KFC Australia emphasized when news.com.au contacted the Colonel to confirm whether the « crackling » method was being used Down Under.
« Our famous delicious sauce is made the old-fashioned way and is another famous Colonel recipe that we are proud to offer our customers, » said a spokesman.
The « real » sauce recipe, however, has split fast food fans, with some saying they « wish they hadn’t seen this ».
Some said the video, which shows the worker scraping black sludge from a tin container and mixing it in water, turned them off from the supplement – and described it as « terrible » and « wrestling ».
« I’m horrified, » wrote one, while another said, « I’ll never eat sauce there again. »
However, many said it was « the most delicious sauce ever, » saying the clip only made them want more of it.
« You leave out the part where you dig it through a sieve to get rid of the crackling so it’s not lumpy, but otherwise it’s fine, » explained another.
« I mean, it’s weird that they put it in the microwave and now they put it in a large saucepan, but otherwise it’s normal, » one woman wrote.
The new viral clip, in which UK gogglebox stars respond to the method, has been viewed over 715,000 times since its release on TikTok on Saturday.
It is not the first time that the « secret » of the KFC sauce has been revealed on the social media platform. User @ cheddar4.7 shared a video in September 2020 in which the « crackling » is discussed.
The video was recorded with a similar response, with some declaring it « gross » while others said it was making sauce.
His video goes in more detail and shows that a powdered sauce pouch is added to the crackle when mixed with water. It’s then microwaved for 18 minutes, half removed to mix, and put back in to stop zapping.
The mixture is then passed through a sieve before being placed in containers that are labeled and kept for six hours.
